Lets begin by saying the truth, this dish is not healthy at all because its fried, but since were using the best olive oil and not trans-fats were limiting how unhealthy it really is. but really when it comes to food sometime you just have to treat yourself with the best tasting food possible.

This is one of my favorite dishes, quick and easy to make penko bread crumb coated fried chicken steak. This dish is relatively easy to prepare and cook, however it does create a dirty stove so cleaning is required. But its well worth it! Made by Peter

Penko bread crumb chicken fried steak w potatoes. Fried in 'Select' olive oil

Penko bread crumb chicken fried steak w potatoes. Fried in 'Select' olive oil

Ingredients

Protein:

  • 12 slices of fresh steak.
    1. Weight was 1.5 lbs
    2. Sliced super thin
  • 8 oz of Penko bread crumbs
  • 4 oz of Italian style bread crumbs
  • 4 Eggs lightly fork beaten with splash of milk

Sides:

  • 1/2 iceberg lettuce
  • 1 box of boxed mashed potatoes
  • Ariston ‘Shake n Serve’ 2/3 Olive oil 1/3 Balsamic salad toping
  • Some fresh basil for a garnish, Salt, Pepper, garlic salt and Red Pepper flakes
  • Croutons

Directions

  • Start by generously coating your favorite frying pan (Mine is an old cast iron pancake pan) with ‘Select’ extra virgin olive oil, since you’re going to be frying you will need to add more olive oil as the pan requires throughout frying
  • I set my oven dial temp at fairly low setting aprox 2/3 on the dial
  • Next break eggs into a mixing bowl add a splash of milk and fork beat for a few seconds
  • Dump the penko bread crumbs into a large bowl and mix thoroughly with the Italian crumbs. I also added salt, pepper a little garlic salt and I tiny bit of red pepper flakes for heat
  • Delicately peal each slice of shaved steak, this part can be a bit tricky as my steak slices were pretty thin but in the end I always manage. Dunk into eggs on both sides then dredge in bread crumbs. Once coated place them on plate… At this point my olive oil was pretty hot almost smoky so I dropped 3 slices into the pan, they covered the whole pan. I went back to dunking and dredging, I got all 3 pieces coated in about 3-4 minutes perfect because in the middle I had to flip my first round of steaks…
  • Cook for 2-3 minutes
  • Somewhere in the middle as a few pieces are frying take the iceberg lettuce, wash it and break up into small pieces
  • Time to make that boxed side.
  • Now the good part time to plate, a few pieces of steak on each plate, a little mashed potatoe and a little pile of lettuce…Add croutons and sprinkle with the Ariston ‘Shake n Serve’ 2/3 Olive oil 1/3 Balsamic salad toping for that sweet n sour aftertaste…

From start to sitting down and eating it took us exacly 30 minutes. Of course i made a bit of a mess but it was well worth it.. My favorite way to eat the steak is to heavily coat it in the Ariston ‘Shake n Serve’ Balsamic salad toping…It adds a nice sweet taste to the steak.

Enjoy!
