We had been using this vinegar for a few years, making a traditional oil and vinegar dressing with Italian seasoning. In June my wife and I went gluten free on a fast metabolism diet; actually it is our lifestle now. We stopped adding anything to the vinegar and now use it straight on our salads and as a seasoning for vegetables, either during or after cooking.
We found that we like the vinegar better just plain, and it does a fantastic job in cooking. Plus, it kept us away from using salt or fattening sauces in cooking. After 3 months I lost 40 lbs and I don't miss the weight or the sauces we used to use. It has really helped make our change of eating lifestyle a great and flavorful decision.
